2 lbs. meat - beef or veal
4 bay leaves
2 carrots
2 potatoes
2 celery stalks
1 garlic clove
4 rosemary branches
7 oz. prunes (slightly macerated)
2 yellow onions
⅓ cup cherry or balsamic vinegar
⅓ cup all-purpose flour
A pinch of red pepper flakes, salt and pepper, and sugar
2 tbsp. butter
4 Inches licorice, root
3 cups malt beer
4 ½ cups beef stock or water

Homemade beef stew is a dish that most people love, and the flavors in this recipe using licorice root and malt beer are sure to please. When you want to cook a dish with a rich flavor your guests would never imagine contained licorice root, this beef stew recipe is perfect.
Prep Work
After trimming the fat and cutting it into stew size chunks, pat beef or veal meat dry and generously salt and pepper on both sides and refrigerate from one hour to overnight. Chop onions, celery, carrots, potatoes, and garlic clove into bite-size pieces. Cover the meat in flour and season with salt and pepper, then melt butter and brown the meat on both sides in the butter before transferring to a plate.
After Browning the Meat
Take carrots, celery, onions, potatoes, garlic, and chili and simmer until it starts to change color. Add vinegar and cook until nearly evaporated, then add the meat back and the rest of the ingredients. Add herbs, beef stock (or water), and malt beer. Heat to a simmer and skim off the fat, and let cook on low for 3-4 hours until meat is tender. You want the beef tender enough to fall apart.
Finishing Steps
You're almost through, just remove the beef, rosemary, bay leaves, and licorice root and keep beef warm. Pass the sauce through a sieve and reduce until desired consistency, then add sugar, salt, pepper, and vinegar to taste. Add the vegetables, prunes, and beef back into the sauce and cook until heated thoroughly again. Now your beef stew is ready to be served - enjoy!
Licorice Root Tea Recipe
2 quarts water
¼ cup liquorice root
A finger's length of fresh ginger, sliced but not peeled
Put all ingredients into a pot and bring to a boil, then lower heat and simmer for 10 minutes. Pour liquid through a fine-mesh sieve and serve hot or cold licorice tea, with honey and lemon on the side. There are many variations of licorice root teas you can make, but this is a basic recipe.
